Home Made Tomato Sauce

I personally don't like using tomato sauce out the jar. I would rather make my own, where I can control what goes in it, and what doesn't. Here is the recipe that I use.
As always remember: tsp = teaspoon

Ingredients:
3 Large tomatoes cubed
1/4 Vidalia onion sliced
1 tsp salt (totally optional)
2 tsp black pepper
4 tsp oil of your choice (anything is good except pressed olive oil)
1/2 tsp oregano
1 tsp of Parsley
1/2 cup water

Step One:
Place a large frying on low heat, adding your oil and onions to the pan
Add the 1/2 the salt to the onions to help them sweat.This should take 3-4 minutes.
Step Two:
Place your tomatoes in the pan with half the black pepper, all of the oregano, and the rest of the salt.
Cook the tomatoes on low heat, covered with a lid for 20-25 minutes. About half way though the cooking add your 1/2 cup of water. This keeps your sauce from turning into a paste. Stir every few minutes so that nothing sticks.
Step Three:
When the tomatoes are completely cooked out, add your parsley and the rest of your black pepper.

Use this sauce with anything that you would use the jar stuff for.
