Easiest Salt Fish Dish to make in your life.
Ingredients:
teaspoon = tsp
2 packages of boneless salted cod
1 large Vidalia Onion
2 large tomatoes
1/2 tsp salt
2 tsp black pepper
1 tsp paprika
1/3 a packet of Sason seasoning ( can be found in your Spanish section of your local food store)
1/4 tsp oregano
1 tsp parsley
1/4 cup of vegetable oil
Step One:
In a large pan place both packages of salted cod in 5-6 cups of water. Place on high heat until the water starts to boil. Repeat this step 4 times, or until you can just taste the salt in the salted cod. Once the salt is mostly gone, remove the fish the from water and stove and set aside.
Step Two:
In a large frying pan add all the vegetable oil and place on medium heat.
Step Three:
Cut Onion into long strips and place into heated frying pan for 4 minutes. Add salt and constantly stir. You are sweating the onions.
Step Four:
Cut up both tomatoes into cubes, place the cubed tomatoes in the frying pan with the onions and cook for 7-8 minutes or until the skin of the tomatoes fall away, and meat becomes mostly mush.
Step Five:
Break apart the fish into bite sized pieces and place in the frying pan. Add your black pepper, Sason, paprika, oregano, and parsley and let cook on medium heat for 4-5 minutes or until the tomatoes are completely mush.
You can serve this as Breakfast with fried dumplings, for lunch with yam, green banana, and cooked dumplings (recipe to be given at a later date), or for dinner with white rice.
Do you have to use Sason in this recipe seeing as I can't find it. Will it affect the taste at all?
ReplyDeleteYou don't have to use Sason it is opional. What you can use instead of it is 1/4teaspoon garlic and onion powder. and 1/8 teaspoon adobe for fish. That should give you around the same taste
